Easy Pie Recipe: Four Simple Ingredients + One Lazy Saturday Afternoon = One Awesome Key Lime Pie

I think I found it.

My go-to pie recipe, that is.  And not only is this recipe easy as pie, giggle, giggle, it’s also mouth-wateringly, tangingly delicious.

And, you can make the thing in 20 minutes flat, enjoying your glass of wine all the while. Crazy.

The reason this discovery is so meaningful to me is because my past efforts at baking desserts has been, in a word, disastrous.  I cannot bake!  Seriously. So I needed a go-to dessert I could make on the fly and still impress the dinner guests with, and this one does the trick.  If you, like me, are a little lacking in the baking department, this can be one of your go-to desserts too. Trust me.

The secret ingredient is Nellie and Joe’s Key West Lime Juice — accept no substitutes.  ; )

Recipe: Nellie and Joe’s Key Lime Pie

Ingredients

· 9” graham cracker pie crust
· 14 ounce can of sweetened condensed milk
· 3 egg yolks (whites not used)
· ½ cup of Nellie and Joe’s Key West Lime Juice

Preparation

· Combine milk, egg yolks and lime juice; blend until smooth
· Pour filling into pie crust and bake at 350 degrees for 15 minutes
· Allow to stand 10 minutes before refrigerating
· Just before serving, top with freshly whipped cream, or meringue, and garnish with lime slices

Tips:

· You can find this recipe on the back of the Nellie and Joe’s Key West Lime Juice bottle
· If you’re here in North Carolina, you can find Nellie and Joe’s Key West Lime Juice at Harriss Teeter, Lowe’s and Walmart
· Visit the Nellie and Joe’s website to find out where to purchase the lime juice in your state, and for more recipes

And speaking of more recipes, I definitely think a batch of Margaritas would benefit greatly from this nectar!  : )

Bon Appetit!
